Like many people, when I think of Fall, I think of Pumpkin Spice Latte from Starbucks. I order the soy milk version. Recently I learned that even though I order my latte with soy it is still not vegan because they use some dairy in with the flavoring. With a 380 calories and a sugar content of 49grams (which equals 12 teaspoons of sugar!) in one cup, I decided to try to make a much healthier version.
My recipe is 46 calories sweetened with agave or 16 calories without the sweetener.
I simply brew a cup of The Fresh Market's Pumpkin Spice coffee, heat and froth some coconut milk or to make it extra thick I will use Lite Culinary Coconut Milk from So Delicious and add a teaspoon of agave. So easy! Actually it takes less time then ordering it at your favorite drive thru window, plus you will have more money left in your wallet for an even healthier lunch!
